Get ready to rethink what sustainability really means behind the bar. In this dynamic and thought-provoking seminar, bartender and mental health clinician Sherri Jenkins teams up with glass waste reduction champion and Bar Bottle Collective founder Em Sego to explore the full spectrum of holistic sustainability—beyond just eco-friendly practices.
From designing future-forward cocktail programs to creating culturally rich, socially supportive, and mentally healthy bar spaces, this session will spark ideas and conversations that challenge the status quo. Building on last year’s seminar on psychological safety and conflict mediation, this class will dive deeper into how to sustain not just our planet and profits, but our people and communities.

Sherri Jenkins, Mental Health Clinician and Bar Professional
Sherri Jenkins, a Louisville, KY native, is a Licensed Professional Clinical Counselor (LPCC-S), Reiki II practitioner, and award-winning bartender dedicated to bridging the gap between mental health and the service industry. As the Conflict Resolution Officer & Wellness Chair for the Kentucky Chapter of the U.S. Bartenders Guild, she brings a trauma-informed lens to a traditionally high-stress field.
Through consulting, public speaking, conflict mediation, and community-driven events, Sherri empowers individuals and organizations to prioritize wellness, build resilient teams, and destigmatize mental health—especially behind the bar. Her work creates inclusive spaces for connection, healing, and sustainable change.
Em Sego, Mixologist and Glass Waste Reduction Champion
Em Sego, born and raised in Louisville, KY, is an award-winning mixologist and founder of The Bar Bottle Collective. With a passion for inclusive and sustainable practices, she has worked closely with bars and restaurants to develop beverage programs that are both innovative and environmentally responsible. This marks Em's fourth appearance at PDXCW, where she continues to learn and commits to progress in the hospitality industry.
Em has attended numerous sustainability seminars, which sparked her dedication to giving back to both the community and the industry at large. In 2025, she founded The Bar Bottle Collective—a bartender-led initiative focused on raising awareness about the significant glass waste generated by the hospitality sector. The Collective offers local bars and restaurants a safe and effective solution for glass disposal, helping to reduce environmental impact and promote lasting change.
