EDUCATION: Saving Glass in the Bluegrass: How bartenders can make a difference through glass recycling

Ever thought twice when throwing a wine or liquor bottle in the trash? Maybe it was a cool vintage bourbon bottle, or a simple yet beautifully colored bottle and you thought to yourself “I could do something with this.” If so, this class is for you! Em Sego, The founder of “The Bar Bottle Collective” leads the discussion that calls out a paramount issue within our bar industry, glass waste. We will review eye opening stats, a number of resolution options, and why we should take it upon ourselves as bartenders to make change. You will leave this class with awareness, tools, ideas, and techniques to make a difference in your community.

Em Sego, Founder, The Bar Bottle Collective
Em is an award winning mixologist born and raised in Louisville Ky. There she has assisted with nervous bars and restaurants beverage programs to provide inclusive and sustainable techniques within them. You may have seen Em here before, as this is her fourth PDXCW. Em has attended many sustainability seminars and, through them, she has found a passion for giving back to our community and our industry as a whole. In 2025 she founded “The Bar Bottle Collective”, a bartender founded initiative that brings awareness to the enormous glass waste contribution within our industry, and provides a safe and proper disposal option for local bars and restaurants to combat glass waste.
