EDUCATION: Mentorship in the Bar: Lessons from the Trenches

Every new bartender has potential, and a good mentor can be the difference between a newbie becoming an overnight-sensation or a long career of trial-and-error. In this panel, Matt Ray (Sazerac) recounts his own story in New Orleans with his favorite mentor, Geoffrey Wilson, now leader of the award-winning hospitality training program “Turning Tables”. We will detail Geoffrey’s on-the-ground experience mentoring students, while Matt, a former high school teacher, will talk through WHY those techniques work so well from an educator perspective. They’ll discuss the ups and downs of mentorship, best practices, and ultimately leave you with simple takeaways that can add immense value to any hospitality program.

Featuring:
Matt Ray, National On-Premise Industry Manager, Sazerac
Geoffrey Wilson, Assistant Programs Coordinator, Sazerac

In addition to cocktail development and public speaking for Sazerac, he has appeared in the “Imbibe 75” and was awarded Whiskey Magazine's "Honorable Mention for Whiskey Brand Ambassador of the Year", which is basically like saying he's the 2nd-best ambassador for whiskey, but he's pretty proud of that!

Then sharpen your arsenal with an infusion-making masterclass in the Eastern European tradition. Designed to give working bartenders practical, creative tools behind the bar.

About Kachka Fabrika
Kachka Fabrika is the newest chapter from husband-and-wife team Bonnie and Israel Morales, opened in 2025 inside their working vodka distillery in Portland’s Central Eastside. By day, Fabrika is where Kachka’s spirits are crafted, and by night it transforms into a sleek cocktail and zakuski bar showcasing martinis, seasonal cocktails, and an elevated seafood-driven menu. For over a decade, the Kachka team has built unmatched expertise in vodka—tasting, serving, and educating on one of the world’s most important spirits. At Fabrika, that knowledge comes to life through freezer-poured vodka, house-made infusions, and pairings of oysters, caviar, and dumplings, all delivered with Kachka’s signature hospitality. Like the flagship Kachka, Fabrika has already drawn national attention, cementing its place as both a distillery and a destination where Portland’s cocktail culture and Eastern European traditions meet.
